The soft, spoonable sheepβs milk cheese is made with thistle rennet, which imparts a slightly bitter flavor profile.
Super Jury member Manual Maia, said the cheese has a βsublime match of protein and fat,β adding, βThis cheese is an icon, itβs like our Eiffel Tower.β
